Would a symmetric square goban work okay? I plan on making one and it's just simpler to use full inches
Well it will work, but you have to understand that it just doesn't look as nice to the eye.
A perk of going with more accurate measurements is fitting the board size to your stones.
Boards with the grid in squares are common in China. Preferring the oblong grid is mostly a matter of Japanese custom.
