So in this example, what if the black stone was not there to protect white from cutting? If white makes a cut, what are black's options for defending?

It depends on what other white stones are in the vicinity. It could be a severe cut; Black could be short of liberties on both sides, depending.

When the Keima will be placed at B1, W2 cannot cut. Are there reasons not to use this variant?
